This is a great soup, for making up in a batch, and can be used as a starter, or served with fresh bread to make a nutritious meal containing at least two of your five a day.
Ingredients
- 1 diced chicken breast
- 1 small onion
- 3 carrots
- 1 parsnip
- 1/2 small swede
- 1 large leek or 2 medium ones including the greens
- 1 or 2 cloves of garlic
- 2 tblsp split lentils
- 1 bunch fresh parsley
- dried mixed herbs
- 1 gluten free stock cube
Recipe
Roughly chop the vegetables along with the chicken. Add a little bit of oil to a saucepan and add the chicken along with the garlic and the onions. Cook until the onions turn white and the chicken has started to cook. Add lentils to thicken and all the other vegetables. Add a vegetable stock cube along with water. Add all the parsley and bring the mixture to the boil then either leave to simmer or wrap it in a towel so that it can continue cooking. We use Mr D's cook pot so that it can continue cooking without using gas. Get of with your day and come back after a couple of hours.
Serve with bread to make a delicious meal. Keep a few sprigs of parsley for your presentation
Top Tips
When dicing up your carrots, parsnip and swede keep the size of the veg, about the same size. It really does improve the look of the soup
