We love Mulligatawny Soup because it is a great soup for making from leftovers, we usually find that we will have leftover beef gravy from say a pot roast or you might have leftover curry sauce from a curry. So having a dish like this will just mean that you will spread your budget further and simply waste less food.
Mulligatawny Soup from leftover beef gravy
Ingredients
- Leftover Beef Gravy - see Pot roast for simple gravy
- 2 tablespoons of Tomato Purée
- â…“ to ½ teaspoon Chilli Flakes
- 1 well heaped teaspoon Garam Masala
- 1 small Onion finely chopped
- Fresh coriander just before you serve
- 1 tablespoon Vegetable Oil
- 1 teaspoon Fennel Seeds
- Salt and Pepper if required
- 1 well heaped teaspoon of ground cumin or ground coriander
- 1 clove garlic
- 1 teaspoon ginger
Method
Lightly cook the onions, garlic and spices in oil, put in the tomato puree, add the beef gravy. Heat and Serve. If you have fresh coriander add this just before serving.
Mulligatawny Soup from leftover curry sauce
Ingredients - Serves 2
- 1 mug full Curry Sauce
- 1 tin tomato soup
- Coriander
Method
Heat the leftover curry sauce with a can of tomato soup. Heat up and serve with gluten free bread
Top Tip
For anything with spices in always cook the spices in oil first as the flavours of the spices come out into the oil
