This is a really nice Mexican dish which we were introduced to by Mr D's cookbook. The dish contains peanuts, chilli and chocolate and is delicious.
Ingredients - Serves 2
- 1 tbsp oil
- 4-6 pork bellies
- 1 onion
- 3 cloves garlic
- 1/2 tsp chilli flakes
- 2 tsp ground cumin
- 2 tsp ground coriander
- 1 tsp ground cinnamon
- 2 tbsp cider vinegar
- cherry tomatoes
- 1 tbsp tomato purée
- 1 gluten free stock cube dissolved in 300ml of hot water
- 3 tbsp crushed roasted peanuts
- 3 tbsp dark chocolate
- Salt and pepper to taste
Method
Heat the oil, then add the garlic and onions, followed by all the spices so that the flavours in the spices can come out into the dish. Once the onions have gone transparent, it is time to add the rest of the ingredients, making sure that you add the chocolate after the water has been added. Once all the ingredients are bubbling, then put into Mr. D Thermal cooker and leave for 2-3 hours. At about 1/2 hour before serving use the Mr. D pot to cook the rice and add cornflour to thicken if required.
Top Tip
Dark chocolate contains magnesium one of the essential vitamins needed to prevent muscle aches. The quantity required is two squares a day and the chocolate must be over 70% coco.
